What to Do With Too Much Watermelon
Watermelon is a delicious summertime treat, but sometimes it can be hard to know what to do with too much of it. Whether you’ve bought too much at the store or grown an abundance in your garden, there are plenty of ways to make use of extra watermelon.
One of the easiest ways to preserve watermelon is by freezing it. Cut the melon into cubes or slices and place them on a baking sheet lined with parchment paper. Freeze for several hours until solid, then transfer the pieces to a freezer-safe container or bag. Frozen watermelon will keep for up to six months and can be used in smoothies, desserts, or just enjoyed as a refreshing snack.
Making Watermelon Juice
If you have more watermelon than you can eat fresh, consider making juice out of it. Simply blend the melon in a blender or food processor until smooth, then strain through a fine mesh sieve or cheesecloth. You can also add other fruits and vegetables like cucumber, lime, and mint for added flavor. Enjoy your homemade juice right away or store it in the refrigerator for up to three days.
Preserving Watermelon Rinds
Don’t throw away those watermelon rinds! They can be pickled and used as a tasty condiment on sandwiches and salads. To pickle them, cut the rinds into cubes and place them in a jar with vinegar, sugar, salt, and spices like cinnamon and cloves. Let the mixture sit overnight before serving.
